Many years ago, in culinary school I was castigated in front of the entire class for cutting a "Bell Pepper" from the outside (Shinny side). My teacher who was extremely well skilled with a knife said the reason that you never slice a Pepper or other glossy smooth sided vegetable or fruit from the outside is becuase even the sharpest of knives sooner or later will slip and instead of slicing the pepper you will end up slicing (cutting) yourself and possible very severely. He was of the firm opinion that besides improperly preparing a customer's meal the second most unforgivable sin in the kitchen was cutting yourself with your knife. He said both transgressions were acts of negligent carelessness and as a chef the one thing in the kitchen you cannot be is negligent or careless. Skip ahead a few years and I was working kitchen manager at an upscale Tex-Mex restaurant, and we had "prep chef" who had been hired with great referrals and recommendations and on his first day he was slicing onions and peppers because while Tuesday might Taco Day at many Tex-Mex eating establishments Friday was Fajita-Friday so needless to say we went through a lot of Bell Peppers, and Onions. Anyway, I was watching this gentleman work and noticed that he was slicing pepper just like the host of this video was doing and I nicely asked him to slice the peppers from the inside to wit he said that he had been slicing peppers his way for years and wouldn't you know it the next pepper he started slicing his knife slipped on the smooth shinny skin of the pepper and he badly cut the tips of three finger all of which required stiches and becuase of how badly his fingers had bleed at his work station we had to throw out all the peppers and onions he had cut for that nights dinners as well as shut the prep area of the kitchen down to sanitize it. The prep chef who cut himself was out of work for a month and suffered nerve damage to two fingers. As a result, I added to my short list of offenses that will get you fired on the spot if I witness an employee doing something in the kitchen to include you guessed it improperly slicing of a pepper. I know it seem stupid but that was not the first time I had seen someone cut themselves doing any number of sketchy things with a knife or a meat slicer but never as bad as that man did that day while slicing a bell pepper.
