  1. This looks delicious. I'd make it for dinner tonight, but I have no chorizo. I'll have to wait until my next shopping trip. According to their website, my grocery store does carry Spanish chorizo, but if it is out of stock, I'll go with vegetarian Mexican chorizo.

  2. Isn’t this a Spanish version of Shakshuka? And aren’t there versions from all around the world? Didn’t the original recipe come from the Middle East, to be carried with the Moors to Europe and thence elsewhere? I believe there’s a Persian “green” shakshuka that’s chock-full of herbs, a Mexican version that incorporates salsa, a Turkish version using yogurt, and so on … but almost always it’s eggs cooked atop a sauce. Or am I wrong?
